Garlic mushroom spinach linguine
Originally from Family Style Food's "Mushroom Spinach Pasta with Shallots".
Ingredients
- 1 pound linguine
- 4-5 cloves garlic, finely minced (I use more)
- 1 container of brown Bella mushrooms (I buy the whole ones and wash/slice myself or you can do a mix of mushrooms)
- 1 bag of spinach
- 2-3 Tbsp Garlic olive oil (and you can add as you go)
- Salt
Optional:
- red pepper flakes (I add a little)
- A couple of shallots (I don’t)
- Parmesan cheese (I don’t)
Instructions
Prepare/cook linguine in salted and slightly oiled water (you can save some pasta water, but I don’t end up using).
Heat oil in hot pan.
Add mushrooms and cook for a bit, add garlic (and shallots if using) and cook, add spinach and cook.
Then add linguine (add more oil if not enough for you and/or pasta water if you need it), salt to taste, red pepper flakes to taste. Add grated Parmesan cheese topping if you want.
