Mashed Potatoes

Ingredients

  • 3 lbs Russet, peeled and cut into 2“ pieces
  • 4-6 Tbsp unsalted butter, cut into pieces
  • 1/2 cup whole milk or heavy cream
  • garlic, optional, + garlic powder
  • salt
  • pepper
  • (sour cream, optional)

Instructions

  1. Place potatoes in put, cover with cold water. Season with salt, bring to a boil. Reduce to a gentle simmer for ~ 10 to 12m
  2. Drain and return to pot. Let it sit over low heat for 1 to 2m to evaporate moisture.
  3. Mash potatoes
  4. Warm milk over low heat until hot but not boiling. Gradually fold warm milk into potatoes, stirring gently to combine.
  5. Fold diced butter into potato/milk mixture.
  6. Season with salt and pepper.
  7. Don't overmix!
