Prime Rib

Prime Rib Recipe from Simply Recipes

  1. Salt the Prime Rib
  2. Let rest for three hours
  3. Pat dry with a paper towel
  4. Preheat oven to 500°
  5. Garlic, butter (they said olive oil), salt, pepper
  6. Roast at 500° for 15m
  7. Then at 325° until meat thermometer registers 115° for rare or 125° for medium rare. Allow about 11-12 minutes/lb for rare and 13-15 minutes/lb for medium rare.
  8. Transfer to a carving board, cover, and let rest for 30m.
  9. Cut away strings, remove bones, slice roast across grain.

For example, with a 10 pound roast, you would expect 2 3/4 hours of total cooking time for medium rare (15 minutes at 500° and 2 1/2 hours at 325°). In this case, check after 1 hour 45 minutes of total cooking time, or 1 1/2 hour after you lowered the oven temp to 325°
